Yum! The bitter of the purple cabbage really tastes good against the sweetness of the apples and rasins. The pecans add a nice buttery crunch and the apple cider vinegear, mayo, and sugar make the whole salad taste good. Thanks for sharing this colorful and healthy recipe.
This is a hybred of Cole Slaw and Waldorf Salad and boy does it work well. I used green cabbage as that's what I had, 1/4 cup of raisins and a whole Gala apple that was coarse grated (peel on). Splenda was used in place of the sugar and low fat/cholesterol free mayo. This is a really lovely summer salad that is quick to make and a pleasure to eat. :D
