A friend of mine from Panama made this delicious side dish & I was instantly hooked. I like it best when still warm. The beets in this recipe give it a beautiful purple color.
- boil potatoes, carrots, celery, and eggs on stove top until potatoes are tender.
- peel & cut carrots, celery, eggs and potatoes
- in large mixing bowl add all ingredients, salt to taste, I prefer less salt & mayonaise.
- serve while warm.
