ingredients

1 cup butter, softened
¹⁄₂ cup sugar
¹⁄₂ cup packed brown sugar
1 egg
2 teaspoons vanilla extract
1 cup pumpkin (not pie filling)
2 cups all-purpose flour
3 ¹⁄₂ teaspoons pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
¹⁄₄ teaspoon salt
11 ounces white chocolate chips

directions

In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, vanilla and pumpkin. Combine dry ingredients; gradually add to the creamed mixture and mix well. Stir in white chocolate chips.
Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until firm. Remove to wire racks to cool.
