      In honor of Derf, one of my favorite 'Zaar chefs! For the Cook-a-Thon in your honor! Made this today for a friend and my whole house smells wonderful. Very easy to put together - do not be afraid of the list of ingredients, many are spices and this whips up quickly. Batter was pretty thick and I was worried the cake would be very dense...this is just wonderful cake. Light enough and still substantial. I was worried about using walnuts as my friend has small children, so I substituted mini chocolate chips (1/2 cup) and what a treat! Also baked in two 9x9 pans rather than a tube. Will make again with walnuts and update my review. This is a special cake that I will make again and again. Thanks, Derf!! :)
