Pumpkin Swirl Breakfast Rolls

"I'm anxious to try these yummy looking rolls. I love the combination of pumpkin, cinnamon and pecans all wrapped up in a soft sweet roll. This recipe was found in Libby's Home Baked Goodness cookbook. For larger rolls, see the note at the bottom. Times listed does not include time for dough to rise."

  • Combine bown sugar, cinnamon and cloves in a medium bowl.
  • Cut in butter with a pastry blender or 2 knives until crumbly.
  • Stir in pumpkin, nuts and raisins.
  • Roll bread dough into 12 x 12-inch square, and spread with pumpkin mixture, leaving 1 inch border along 2 sides.
  • Roll up dough, starting from side with 1 inch border; seal edges.
  • Slice into 12 pieces, place cut side up in greased 9 inch round or square baking pan.
  • Let rise in warm place until double in size.
  • Bade in preheated 375* oven for 20-25 minutes or until golden brown.
  • Cool slightly on wire rack.
  • Combine glaze ingredients in small bowl until smooth.
  • Drizzle rolls with glaze. Serve warm.
  • **Note: For extra large rolls, roll dough into 12 x 9 inch rectangle. Spread with pumpkin mixture leaving 1 inch border along 9 inch sides. Roll up dough, starting from 9 inch side, seal edges. Slice into 6 pieces, place cut side up in greased 9 inch baking pan. Let rise and bake as above.

I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit.
