Everyone has their own version of pumpkin soup - it's such a popular and easy recipe to make. This one is mine - hope you enjoy! By the way, I add chilli flakes to mine as I like it a bit spicy.
- Peel and dice into large cubes the pumpkin.
- Peel and dice into large cubes the sweet potato.
- To a large pan add all ingredients and cook for up to an hour and remove from heat.
- Cool and blend soup.
- Serve hot with a dollop of cream (optional) and crusty warmed bread.
