A moist & low-fat muffin.
- 1 (18 ounce) box spice cake mix (I prefer SuperMoist cake mix *also good using chocolate cake mix)
- 15 ounces pumpkin
- 1⁄2 cup water
- Mix all ingredients together by hand or with a hand mixer. Pour into lined or sprayed muffin tins and bake according to box directions for cupcakes. *Be sure not to overbake.
I liked these, and I liked the nutrition values. My husband however did not, he said they were thick and he did not care for the taste. But it may have been my fault, I told him ahead of time that they were low fat and he stuck his nose up at them even before he tried one. So I will bring the bunch to work for the girls I know they will enjoy them!
