I made these because I had a can of pumpkin pie mix I wanted to use up. The result, SUPER soft and yummy fall cookies with a light pumpkin flavor. Not too overpoweringly pumpkin but definitely enough to taste the fall goodness. Even my picky 3 yr old loves them.
