This was the best pumpkin bread we've had in a long time! My own tweeks were to use vanilla yogurt in place of the oil and I also added a tsp of vanilla extract. I also added just a pinch of alspice. Great post. Thanks!
Skip it...not so great
I wasn't overly impressed with this bread. It was pretty underwhelming, so I've tried playing with the spices, including adding pumpkin pie spice. The flavor improved, but the texture is still way too heavy. There is potential here, but it's not the quick-and-yummy recipe I'd hoped for.
This is a great recipe for bread machine. I used bread machine flour, and it gives me muffin-like texture. Thanks for sharing this recipe!
This was the worst bread I've ever made. It was an overcooked, unrisen lump. Seems there should be yeast SOMEWHERE in the recipe because the bread didn't rise at all. Awful recipe.
This sounds great. Can't wait to make it!!
The first time I made this bread (using all purpose flour) it came out very dense and heavy. The second time I changed the recipe by using cake flour (1 1/2 cups plus three tablespoons) and it came out more tender and much lighter. Not like cake, but more like the muffin texture I associate with quick breads. I'm going to try this with pecans today instead of walnuts and maybe add some golden raisins too! This bread is delicious and my family loved it too!
