Low-fat version of pumpkin spice bread

  1. 1. Combine sugar, oil, applesauce, and eggs.
  2. 2. Add pumpkin and vanilla extract. Mix well.
  3. 3. Combine dry ingredients in a separate bowl. Add to the pumpkin mixture alternately with water.
  4. 4. Pour into 2 greased 9x5x3 loaf pans or 2 muffin sheets.
  5. 5. Bake @ 350F for 60-70 min.(loaf pans) or 25 minute (muffin pans) until bread tests done. Cool in pans for 10 minute Remove and cool on wire rack.
