  • Preheat oven to 350 degrees.
  • In a large mixing bowl, beat cake mix with water, pumpkin and egg substitute for 3 minutes.
  • Pour batter in a 11 x 17 x 3/4 inch pan jelly roll pan that has been sprayed with Pam.
  • Bake for 23 minutes.

  1. Used regular eggs and substituted cinamon applesauce for water, moist and wonderful, plus I like to add cream cheese frosting. This is a great recipe!
     
  2. Very good. I followed the recipe as written other then I used 2 XL eggs instead of the egg substitute as that is all I had. I did have to bake mine a bit longer but I think it was because of the eggs. This was so moist and yummy! It was good warm and cold.

I followed the recipe as directed with the exception of using eggs in place of egg substitute as I had none at midnight on a Sunday night when my daughter got into a baking mode. :) It was very light and hit the spot.   4. These were just wonderful, more a snack cake than a bar cookie. I added some extra cinnamon to my spice cake mix. The cake also has enough flavor that it does not need a frosting, though a little Cool Whip Free might be nice. Will make this over and over again as it took just a minute to put together and I always have the ingredients on had. My only comment would be on the points values. Ran this through the WW site's recipe builder and got 2 points per serving and 3 points for two pieces. If you cut it into 24 pieces (instead of 32) it is still 2 points. Thanks KelBel.
