Pumpkin Soymilk Smoothie

"I had a can of pumpkin puree (leftover from Recipe #396754) to use up, so I whipped up -- or rather, blended -- this simple smoothie for breakfast. Increase the honey (or other alternative sweetener) if you want a sweeter flavor. Throw in more pumpkin spice if you want it, well, spicier."

  • 236.59 ml soymilk (plain or vanilla-flavored, low-fat if possible)
  • 44.37 ml pumpkin puree
  • 1 banana, cut up and frozen
  • 14.79 ml honey (or agave nectar but less because it's sweeter)
  • 14.79 ml wheat germ
  • 4.92 ml pumpkin spice (or mix of ginger, nutmeg, cloves and cinnamon)
  • 4-5 medium ice cubes

  • Place a cut-up banana in a freezer-friendly container and store in the freezer overnight to freeze.
  • In the morning, add the soymilk, pumpkin puree, banana pieces, honey, wheat germ, spices and ice cubes to a blender. Blend until smooth and frothy. Serve.

I love experimenting on new, fresh and healthy dishes at home that feature anything from the garden and fresh herbs -- scraps always get passed along to my adorable doggies, Nico, Milou and Rex.</p> <p><br />During the day, I work here at Food.com. When I'm not focusing on food, I'm running away to rural upstate NY to play with the chickens, reading the New Yorker or watching waaaaay too much daytime TV (thank goodness my favorite show moved online now!).</p> <p>Also, I now have lots of cats! 5 to be exact. We're a bit weak to the strays that need a helping hand and a loving home, but I've also managed to get many fixed and placed in other homes too. I consider that my second full-time job. :)</p>
