I have only made this recipe once and I really liked it. I didn't have any fresh pumpkin so I had used some pumpkin puree that I had in the freezer and cut the recipe in half.

  1. In a slow cooker, combine all the ingredients; mix well. Cover and cook on low for 8-10 hours or until pumpkin and apples are tender. Cool pumpkin mixture slightly; process in batches in a blender or food processor. Transfer to a large saucepan; heat through.

Just loved the natural sweetness of this pumpkin soup. As we are on holidays I did not have access to a slow cooker, put all the ingredients in a large pot and cooked slowly on simmer for about 35 minutes till everything was tender and zapped with a stick blender leaving some chunky bits which were a delight to bite into and I als scaled the recipe back to 2.25 serves (to use 1 cup of broth and ended up with 3 cups of soup and couldn't resist eating the lot).
