This is my favorite for the holidays! It's like pumpkin pie with rice! I got this recipe from a local newspaper.

Very good! Halved the recipe, used fresh, frozen pumpkin and omitted the raisins. Mild spices, a lovely variation of plain rice pudding. Thanks for sharing the recipe!

  1. Combine pumpkin, sugar, salt and spices; stir in eggs.
  2. Add milk and mix well.
  3. Combine rice and raisins to the mixture and stir together. Pour the mixture into a 1 1/2 quart casserole dish and place in a pan of water.
  4. Bake at 350 degrees for 50 to 60 minutes, or until set in the middle.
  5. Cool completely and top with whipped topping.
