  • Combine flour, soda, powder, cinnamon, nutmeg & salt.
  • In a separate bowl cream butter & sugar - add pumpkin, egg, & vanilla. Beat until light & creamy.
  • Mix in dry ingredients until well blended.
  • Drop by tablespoon onto greased cookie sheet.
  • Bake @ 350 for 15-20 minutes or just until edges are beginning to brown. COOKIES WILL STILL BE VERY SOFT when removed from oven.
  • Allow to cool on rack.
  • Drizzle glaze over top of cookies.

  1. Just made these for Halloween. Yum. A soft cake like cookie with just the right amount of pumpkin and spice. I needed to add just a little more milk to the glaze. I will put this under favorites in my cookie recipe collection for sure. Easy to make too. Thanks for sharing!
     
  2. Loved these - so light an fluffy. I think next time I will add cloves for some extra kick. I didn't even use the glaze - they were tasty without!
     
  3. Very easy recipe. Love the seasonal flare. Tasted like a sugar cookie with pumpkin in it (which I liked). Very fluffy. Will make each fall. So easy.
