A really yummy recipe from my mom's friend, Marilyn. Great for Halloween or Thanksgiving.
- 1⁄2 teaspoon cinnamon
- 1⁄8 teaspoon ginger
- 1⁄2 teaspoon clove
- 1⁄4 teaspoon baking soda
- 3⁄4 cup cooked pumpkin (canned stuff)
- 1 1⁄4 cups cold milk
- 1 (120 g) package butterscotch pudding mix
- 1 1⁄4 cups whipped cream
- Combine spices and baking soda in bowl.
- Mix in pumpkin and blend well.
- Add milk and pudding.
- Beat for one minute.
- Fold 1/2 cup of the whipped cream into the mixture.
- Garnish with rest of the whipped cream.
This is an outstanding recipe and one that can be whipped up in a flash for company or for a casual winter supper.
This is really really good! Used sugar-free, fat-free butterscotch pudding, which I made according to the box. I mixed the spices, soda, and pumpkin, then I added the pudding. I'm kind of curious about what the soda does for this recipe. I suppose it has something to do with neutralizing acidity. Anyway, it was delicious, so I wouldn't want to leave anything out!
This is a great recipe! I'm a big fan of all things pumpkin, but this is my new favorite, beating even pie! Had to use two small boxes of pudding, pumpkin pie spice, and a full 15oz can of pumpkin, just due to ingredients on hand.
