ingredients
- 1 tablespoon vegetable oil
- 1 lb boneless skinless chicken breast, cut into 1 inch pieces
- 1 cup chopped onion
- 1⁄2 cup sliced carrot
- 1 cup sliced celery
- 1⁄2 chopped red bell pepper
- 1 3⁄4 cups solid pack pumpkin
- 1 3⁄4 cups chicken broth
- 1 1⁄4 cups hominy
- 1⁄2 cup sour cream (I prefer fat free)
- 3 tablespoons chopped fresh cilantro (Parsley may be substituted)
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper (I prefer freshly ground)
- 1⁄2 teaspoon dried oregano, crushed
- 1⁄2 teaspoon ground cumin
- 1⁄8 teaspoon ground nutmeg (I promise this is good)
directions
- HEAT oil in a large saucepan over medium-high heat.
- Add chicken, onion and carrot; cook for 3 to 4 minutes or until chicken is no longer pink.
- Add celery and bell pepper; cook for 3 to 4 minutes or until vegetables are crisp-tender.
- STIR in pumpkin, broth, hominy, sour cream, cilantro, salt, pepper, oregano, cumin, and nutmeg.
- Reduce heat to low; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.

I'd give this eight stars if I could! I wasn't sure about the pumpkin, because sometimes the taste is overpowering, but this ROCKED! The pumpkin lent a richness, and a glorious color, but otherwise we couldn't taste it. I made it last night, and I'm making it again today before the the rest of the cilantro goes bad.....gonna freeze it. I used yogurt instead of sour cream, but otherwise followed it to a T. YUM YUM YUM!

Wow, this is yummy! :) I cooked it in a crockpot on high for 4 1/2 hours (putting it all in at once, except for the sour cream and cumin added in the last 30 minutes). I didn't have celery, so I used fennel (cooked texture is very similar). I added a can of Rotel tomatoes. This is a recipe we'll be making again!!

My husband loved this recipe! As I usually do, I tweaked the ingredients to suit our picky selves. The recipe didn't need much changing; I didn't use any chicken, and I left out the sour cream. Also, when the soup was finished cooking, I pureed half of it with my hand blender to make it nice and creamy and thick. I loved the cilantro and used some for a garnish, as well as quick a few healthy dashes of hot sauce. I know my husband will be asking for this again.

This is a wonderful stew! I have given the recipe to friends with kids and they loved it too even after turning up their noses at pumpkin. I have substituted yoghurt with good results and also made it with sweet potatoes rather than pumpkin and love it that way too. Thank you so much for this recipe.

Delicious! I wasn't sure if my family would like it - but it is a definite "do over". I didn't really measure anything, just kind of eyeballed. I also had to substitute corn for hominy, and didn't have any cilantro either. I definitely will try again with the hominy and cilantro. Thanks for the recipe.

<p>I live in Arizona. Cooking is a relaxing hobby and I love finding healthy meals that have a lot of flavor and heart to them. Recipezaar has not let me down. I could not possibly pick a favorite cookbook. I love searching used bookstores for old cookbooks. I collect other cookbooks that look intresting or have healthy dishes. My collection is modest, but I love it. Also, I love the Taste of Home magazines. They have real food that real people cook. I would have to say my pet peeves are people who drive while talking on cell phones and people who cannot spell potato. It is p o t a t o not p o t a t o e. There is no e unless you are spelling the plural form of potato which is potatoes. I frequently see that word mispelled in recipes and it makes me think the recipe is somehow devalued because of the spellings. The Zaar system of ratings works for me. I do try to explain myself in my reviews and welcome any questions or comments on what I have said. It is not my intention to be mean-spirited if I did not like something (it is rare for me not to like a recipe though):) Recipezaar brings such a nice element to my life and I feel it has been enriched by the wealth of knowledge both in everyone's contributed recipes and on the forums. Also, it is such a nice feature that you can log on practically any time to get help with a recipe or ingredient that might otherwise be imtimidating to prepare by yourself.</p>
