I found this recipe on Pam Tremble's My Protein Book. I have not tried this recipe, but I'm posting this for safe keeping.
- 1⁄4 cup canned pumpkin
- 1⁄4 cup ricotta cheese
- 2 tablespoons matrix protein powder
- 1 teaspoon Splenda sugar substitute
- 1⁄4 teaspoon pumpkin pie spice
- Mix all together until smooth.
- Dig in!
I've been on a low carb diet lately, and have been eating a lot of ricotta cheese and cottage cheese. To mix things up I wondered if any one had tried adding pumpkin, and then found this recipe. I didn't have ricotta cheese this morning, so I used cottage cheese instead. I also hate splenda, so I used just a bit of sugar. I also added a bit of vanilla extract and chopped pecans. It was delicious!
