this is terrific! I had some leftover pumpkin from making pumpkin bread, so I thought I would give this a shot. What a quick way to have a bit of pumpkin pie and not all the calories! Thanks for the recipe :-)
I've been waiting and waiting to try this recipe for years and finally got a chance to make it today. I'm so excited to have such a tasty treat that I don't have to feel guilty about noshing on! Quick, cheap, healthy; I thought you could really taste the vanilla pudding taste though so maybe I'll play with the pudding flavor next time. PS- There will be many more times!
This is the best. I used lemon pudding, that was all I had at the time. Will be making this often and will use vanilla or cheesecake next time.

This is a delicious easy dessert. I had a 1/2 cup pumpkin leftover from making pumpkin bread and searched for a recipe to use it and this was it. I ended up using cheesecake pudding as that is what I had on hand. I topped it with light whipped cream and some crumbled lowfat cinnamon graham crackers. So rich and yummy. We all adored it.
This turned out wonderfully. My oldest son had a very bad day. I wanted to lift him in some different sort of way, and then I found this recipe. Pumpkin is one of his favorites! I made my own pumpkin pie spice, and found a can of libbys pumpkins and the rest turned out smooth and wonderful. Even my very reluctant husband enjoyed it. Thanks so much! IT Did help make my son feel better, brought us all around the table to talk and provided another goodie for the rotation.
This was fantastic! It tasted like a pumpkin milkshake from Burgerville (a fast food chain here in the Portland area). I used regular vanilla pudding and 1% milk, delicious way to use leftover canned pumpkin, thanks!
I love pumpkin pie AND pudding ,so this recipe was just for me. Instead of using just the plain canned puree and the seasoning, I used Libby's Easy Pumpkin Pie Mix. It sweetened the pudding just enough with all the perfect spices.
This totally tastes like pumpkin pie. I made this especially for my dad who is diabetic and has love for pumpkin pie. And he thought it tasted like the real thing. Thanks!
Sorry to say that this didn't go over that well at my house. We didn't think it tasted like pumpkin pie really and the pudding was a pinkish brown colour not the lovely colour in the photos. I think butterscotch pudding might have worked better. I wondered if I was supposed to use pumpkin pie filling but upon checking the recipe again, I see I did do it right with canned pumpkin. This just wasn't for us, but thank you.
