Pumpkin Pie French Toast

ingredients
- 2 eggs
- 1⁄4 cup milk
- 1⁄4 cup pumpkin puree
- 1⁄4 teaspoon vanilla
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon ginger
- 1⁄8 teaspoon clove
- 1⁄8 teaspoon nutmeg
- 2 tablespoons brown sugar
- 8 slices bread
directions
- Mix the eggs, milk, pumpkin puree, vanilla, cinnamon, ginger, cloves, nutmeg and brown sugar in low flat bowl for easy dipping.
- Dip the bread into the egg mixture on both sides and grill in a pan until lightly golden brown, about 2-3 minute per side.
- Serve with maple syrup.

I made this for myself and my two boys ages 4, and 2. They both devoured it (and the 2 year old is very picky). I liked it better than traditional French Toast.<br/>I used pumpkin pie spice in place of clove and ginger. I only used 1 tablespoon of brown sugar and didn't miss the other.<br/>I used whole wheat bread and didn't feel like that took away from the recipe at all.<br/><br/>One thing to note: It did not take 8 slices of bread. I was only able to dip 4 slices well, and then had one 5th piece that wasn't totally soaked.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*.
