Delicious. Light, fluffy, quick cooking and different enough to be interesting. Just used maple syrup and it worked out well. Also had some whipped cream left over from a dessert and put that on top. Will make again!
Made these yesterday morning and they were fabulous. I didn't make the cider sauce but just served them with maple syrup and toasted pecans! I also added a dash of nutmeg and ginger to them.
These pancakes were so delicious! They were also quick to make for a rushed dinner last night, and I appreciated the extra nutrition the pumpkin adds. I didn't have the ingredients on hand to make the cider sauce so we just used maple syrup. My 4 boys and husband enjoyed the pancakes, however, and requested that I make them again--and soon! These are yummy, light and tender pancakes. The cider is sauce is delicious too, just be careful not too cook it too long. We had to heat the sauce to make it pourable. My kids loved this-thanks!
What an easy and delicious recipe! The entire batch was engulfed by my 3 boys ranging in age from 21 to 2 1/2 ! I didn't do the cider sauce though it sounded lovely. They are fairly traditional about their maple syrup! :-) Thanks for sharing an easy pancake recipe that was perfect for a cold fall morning
