Yummy from scratch pumpkin pancakes

  1. In a large bowl, combine the first eight ingredients. Combine the milk, pumpkin, egg white, and canola oil; stir into dry ingredients until moistened.
  2. Pour batter by 1/4 cupfuls onto a hot griddle coated with non-stick cooking spray; turn when bubbles form on top and cook each until second side is golden brown.

These pancakes were SOOOO good! They smelled heavenly in the bowl and in the pan. Pretty heavy pancake so I added a splash more milk to thin out the batter. These will be a regular in my weekend repretoire :)
