A moist, soft cookie bar that has been a favorite of my family for years. I got the recipe originally from my kid's Grandma B.

Directions

  1. Grease and lightly flour a 9x13-inch pan.
  2. Beat together margarine, brown sugar and eggs.
  3. Sift dry ingredients together and then combine with egg mixture.
  4. Stir in pumpkin, nuts and vanilla.
  5. Bake at 350°F for 20 to 25 minutes.
  6. Cool before frosting.
  7. For frosting: Mix together thoroughly cream cheese, butter, powdered sugar and vanilla.

Very, very moist and tasty. More like a cake than a "bar" to me, but whatever...quite delicious. I subbed 1/4 cup applesauce for 1/4 cup butter and baked for 30 minutes. Made too much frosting for my taste, but I'm sure I'll find another use for it! Thanks, Sharlene!

Quite good - moist & flavourful! I do agree with the first reviewer, though - more cake than bar-like. And, it makes piles & piles of frosting - 1/2 the amount would probably work well. I served at Sewing Circle & it was well-received although most were convinced it was carrot cake not pumpkin bars - lol!
