This is a combination of two recipes I had combined a long time ago. I make these frequently - to use up my jars of home-canned pumpkin! These freeze very well.
- Combine all ingredients in mixing bowl. Mix until moistened.
- Put in greased muffin tins.
- Bake at 350 degrees for 22-25 minutes.
Very moist and yummy! I used standard muffin tins and it made 25 muffins. I think the nutritional information might be off as well, b/c with the recipe calculator I used, it shows each muffin (if there are 25 made) is about 245 calories. Very easy to make and great autumn snack!!
Super moist & tasty. I omitted the chocolate chips, only used 1 can of pumpkin (all I had) & reduced the sugar to 1.5 cups, and they turned out great. Thanks for posting.
