The kids helped me make these! We used white whole wheat flour, substituted 3/4 cup brown sugar for 1 1/2 cups sugar, and melted butter instead of shortening. I also left out the cloves and ginger because I didn't have them. They were DELICIOUS and my four children and I have them almost gone before they are even finished cooling!
I've been making muffins for my family on Saturdays and this is what we had last weekend. My family loved them. They were not too sweet with just the right amount of spices. I will definitely make again, especially when the pumpkins are ready. I used canned pumpkin this time, but I will make with fresh in season. Thank you for sharing with us your recipe.
Great and easy to make muffin. Took these to the office and everyone loved them!
Made these today when I was having a hankering for something a bit different. I subbed melted butter for shortening, doubled the recipe and sprinkled vanilla bean sugar on top of the batter before popping them in the oven. The recipe says it makes enough batter for 14 muffins - true if you want smaller muffins, but if you want to use all of the batter, you could easily get it all into 12 muffins, they will just be slightly bigger. Next time, I might add something to these to give them a little more "oomph" - mini chocolate chips might do the trick! But they are still very yummy on their own. Enjoy :)
These are delicious! Moist, not too sweet....couldn't be better!
Loved these muffins. They were moist and full of flavour. I used canola oil instead of melted shortening and added some walnuts. I've been looking for a pumpkin muffin recipe for a while and this is now my " go to"! Thanks!
Made today with a few changes. Reduced sugar to 1 cup, substituted butter, used a 15-oz can pumpkin, omitted water, added 3/4 cup each of walnuts and pre-soaked raisins. DH is loving these and requested I make again! Flavorful and moist!
Great flavor with a perfect blend of spices. Very moist. I used butter instead of shortening, about half of the flour was whole wheat, and I added chopped pecans. My boys and hubby gobbled them for dessert tonight. Delicious!
Great recipe! Thank you so much for sharing! Our whole family loves these. They are moist, delicious and perfectly spiced.
These turned out just ok.
I added a heaping cup of pumpkin and cut the sugar by half a cup plus a little more than a quarter cup. If I added raisins this would be much better. They definitely need something more for texture, although they came out very moist.
