Made for my kids. They loved them and requested again. I topped with frosting.
Excellent and so easy to make muffins. I added a cup of plumped raisins for my raisin loving family and used paper muffin cups. Thanks for posting such a great keeper.
I tried this recipe because it only had two ingredients and looked very easy. The muffins turned out light and very fluffy! Delicious! I used spice cake and it was a wonderful treat. Of course, I added some streusel topping and it was even better!
I made these using a yellow cake mix, 1 tsp. pumpkin pie spice, 1 tsp. caramel flavoring, 2 large eggs, and 1/2 cup chopped pecans. WOW! They are keepers!
I would highly recommend mixing this with a spice cake or carrot cake mix. I think the pumpkin works well with the flavors. I have made this with chocolate cake mix, and it turned out fine. I added some fat free cool whip on the top. A great recipe if you're watching your weight.
Very good and very easy! I almost always have the ingredients on hand. I have used a yellow cake mix and a spice cake mix, both turned out great!
Wow, how simple! I used spice cake mix and baked them in mini muffin tins (yields 48 mini muffins) baked 15 minutes. The dough is pretty dense, so make sure and smooth the top for a pretty muffin. I served these with pumpkin spiced cream cheese frosting on the side so people could dunk or spread at will. YUMM!
it's like pumpkin pie you can carry with you. these are really good, especially with a little butter; and it just doesn't get any easier than 2 ingredients. i split the batter and added some chocolate chips to one half. i also used a mini muffin pan and they were done in less than 15 minutes! i can't wait until fall so that i can start putting these in muffin baskets for people.
Wonderful! My son loved them and they were so easy to make. At first I was skeptical because I thought the batter would be too dry and I thought they wouldn't rise well without eggs. I was wrong! I made one addition - topped them with cream cheese frosting, YUM!!!
