These have a really nice flavor and are nice and moist. I am guessing as to how many this recipe makes, so I am sorry if I am wrong.

  1. Beat eggs slightly.
  2. Add sugar, oil and pumpkin.
  3. Beat thoroughly.
  4. Add flour, cinnamon, baking soda, baking powder and salt to creamed mixture.
  5. Blend until smooth.
  6. Stir in raisins.
  7. Fill muffins tins 2/3 full.
  8. Bake at 400 degrees for 15 minutes.

Flavor was nice and these came out great. However, I hadn't looked closely at the recipe before I started, and almost quit when I saw how much oil went into it...then I checked the calorie count. YIPES! A meal's worth of calories in one muffin!

These turned out great! I think the flavor is developed best when you make these at night and let them sit and serve them in the morning. These were a big hit in our house!

Nice recipe! I used it to make 12 supersized muffins, which were moist and yummy! The only change I made was to leave out the raisins -- my family just isn't into baked goods with raisins for some reason. I think these would also be quite nice with chopped nuts added in. I'll be making these muffins again!
