This mousse is really easy, really fast, and REALLY GOOD! It's a recipe I got from another Weight Watchers member, but I do not hesitate to share it with non-dieters, who also find it very yummy! If you don't want to go totally diet, feel free to substitute regular or lite whipped topping, non-skim milk, etc.
- Combine pumpkin, spice, and milk in a mixing bowl.
- Mix until smooth.
- Add pudding mix and beat for 1-2 minutes.
- Fold in whipped topping.
- Chill well before serving.
I make this and don't use a pie crust....tooo many calories and can't stand the soggy stuff if it lasts long enough to get a second helping. I eat it with the lowest pt cinnamon graham cracker I can find. And it is delicious. sometimes I crunch them up, or just shove a few strips down the side of a parfet glass as a garnish. Either way it's good. My recipe is a little different but it would be splitting hairs to write it. It's delicious as your is written. For my family I have to go easy on the spice ( reduce it to 1/2t or we get a wierd after taste....I was wondering if I cooked the spices in microwave a few t of milk or water with 3 T of pumpkin if that would fix the problem. I'll find out the next time I fix it in a few weeks. Thanks for posting...it's a wonderful desert. I sent a large bowl to a diabetic friend last week and her whole family loved it.
Very good. I used 2 1 ounce boxes of sugar free pudding and an 8 ounce container of sugar free cool whip. I followed the rest of the recipe as written. This makes a lot. This was a nice creamy dessert that my whole family enjoyed.
Really good for a pumpkin pie substitute! Now, only if I can find or invent a low cal cruste..... I'm thinking of some sort of low cal cookie or cracker crushed up and baked with a little egg white should do it. Thanks!
