REALLY moist, full of flavor pancakes. Im always looking for quick, healthy recipes to make at night for my chef husband, he loves pumpkin and these turned out great. Cook for dinner or breakfast! I Usually dont measure all my ingredients, so if too thick or too thin , add a bit here or there!!! always Yummy though!!!
- 1 1⁄2 cups Bisquick reduced-fat baking mix
- 1 cup skim milk (or your preference)
- 1 egg
- 1 egg white
- 1 teaspoon vanilla
- 2 teaspoons pumpkin pie spice
- 1 cup canned pumpkin
- 1⁄3 cup molasses (may want to add more depending on taste)
- Mix all ingredients together.
- Cook on medium heat in pan. Just like any pancake.
- Sprinkle with powdered sugar, serve with syrup, fruit, peanut butter, etc.
Wowza Baking Addict (love the name btw) wonderful!!!!! I didn't have pumpkin pie spice so I did 1/2 a tsp of allspice and 2tsp cinnamon. I ended up adding 1/3 more bisquick after the first patch because of a density issue.... I may not have measured accurately in the beginning ;)<br/>Thanks so much for sharing this, now I am going to stalk some of your other recipes!
MMMMM..... These were delicious. I made these with the Pumpkin Maple Sauce included in Recipe #72343. I used this pancake recipe instead of that one because i love molasses and wanted that flavor in there too. Thanks for posting.
These were good, but a bit heavier than I prefer my pancakes to be. I should have known that the pumpkin would eliminate the fluffy pancake that I love. The flavor was excellent, though. The blend of molasses and pumpkin brought to mind my favorite gingerbread cake recipe. They were a change of pace for a fall breakfast, but just not what we wanted in a pancake.
