Definitely not vegan or diet friendly but man does it taste awesome if you don't feel like making a pumpkin pie.
- 1 cup pumpkin puree
- 2 scoops vanilla frozen yogurt (or be decadent and go for the ice cream)
- 1⁄2 cup ice
- 1 teaspoon honey
- 1 teaspoon lemon juice
- 1 teaspoon pumpkin pie spice
- Pulse all the ingredients in a blender until fully mixed. Garnish with a cinnamon stick or mint leaves.
I froze some fat-free vanilla yogurt to use in this recipe & upped it to about 3 scoops to compensate for leaving out the ice! Very, very thick & oh, so flavorful! Definitely a keeper recipe! [Recipenapped & made in the Vegetarian/Vegan Recipe Swap 22]
