Thiss recipe comes from the 1973 edition of the Good Housekeeping Cookbook. It is one of my favorite recipes to make. The recipe says it makes 2 loaves, but I have used it to make mini loaves and give a gifts. Oh try adding raisins, nuts, or chocolate chips.
- 3 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon salt
- 1⁄2 teaspoon double-acting baking powder
- 1 (10 ounce) can pumpkin (2 cups)
- 2⁄3 cup salad oil
- 3 eggs, slightly beaten
- Preheat to 350 degrees. Grease well 2 9X5 loaf pans. In large bowl, with fork, mix flour with next 7 ingredients, add remaining ingredients and mix until just blended. Turn batter into pans.
- Bake about 1 hours or until toothpick inserted in center comes out clean. Cool in pans on wire rack 10 minutes, remove from pans and cool completely on racks. When cool, wrap each loaf and store at room temperature. (These won't be around long, they are that good!).

So glad you posted this! I'm out of state and wanted to make this for the nice people here that have invivted us to Thanksgiving dinner. I've been making this recipe for over 30 years! My poor old Good Housekeeping cookbook is now held together with duct tape, and it falls open to the page for this recipe since it's my favorite in the book! I usually double the recipe and give loaves away. And my stepdaughter used this recipe once to enter the cake/loaves in the fair and won 1st Place! Of all pumpkin loaf recipes I've ever tasted, this one is my favorite.
I had half a can of pumpkin left over from another recipe and decided to make one loaf of this bread. Well, when I woke up this morning there was only half a loaf left! Excellent bread! Thank you for sharing. Made for ZWT7.
