I made this filling and the fillings for the other two recipes, to audition them all. I liked this recipe, but made a change in it...I used 1/2 cup of Splenda for the sugar. It was plenty sweet enough when put between two cookies. I will definitely add this to my "favorite" file.
I made these at Thanksgiving and they were such a hit I made them for Christmas and added red and green food coloring to the filling. I will be posting a photo shortly. GrandPa Bill
