  • 1 spice cake mix (2 layer size)
  • 425.24 g can pumpkin
  • 3 eggs
  • 78.78 ml vegetable oil
  • 78.78 ml water

directions

  • Combine all ingredients in lg mixing bowl.
  • Beat on med for 2 minutes.
  • Pour batter into 24 lined muffin cups.
  • Bake at 350° for 20 minutes, or until pick comes out clean.
  • Cool in pans 20 minutes.

  1. Perfect cupcakes to get into the fall/halloween spirit. The cake was incredibly delicious, not dry at all. It came together quick and effortless.
     
  2. These were Wonderful! Instead of using plain water I brewed a strong cup of pumpkin chai and used 1/3 cup of the chai. I also added a Tbs of pumpkin pie spice to the batter. These were delicious! They baked up beautifully in 18 minutes. I got 18 full size cupcakes that rose nice and high.
     
  3. We made these one afternoon (me and my boys) and we had a great time. They were so moist and yummy. We topped them with ready-made cream cheese frosting. They were gone in a hurry.
     
  4. I made this using fresh pureed pumpkin that I had in the freezer instead of canned. I have done muffins using just the pumpkin and the spice cake mix. They are excellent but more dense than when you add the eggs and oil. I frosted half with a cream cheese whipped icing and the other half with a cream cheese buttercream icing.

Tweaks

  1. Used pumpkin chai tea instead of water and added 1 Tbs pumpkin pie spice.
     
  2. Decorated with some basic buttercream and candy pumpkins with sprinkles.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
