  • Preheat oven to 375. Grease 9x13 baking pan.
  • For filling: whisk together cream cheese, sugar and egg until well blended. Set aside.
  • For batter: Combine pumpkin, sugar, egg, and oil. Mix well.
  • Stir in flour, cinnamon, baking powder, baking soda, salt, nutmeg, and ginger. Pour into prepared pan.
  • Drizzle cream cheese mixture over batter. Cut through batter with knife several times for marbled effect.
  • Sprinkle with chocolate morsels, if desired.
  • Bake 25-30 minutes or until tester inserted into the center comes out clean.
  • Cool, cut into squares.

Great picture, eh? Hawaii is beautiful. I sure wish I lived there :) Instead, I live in Northern California. It's beautiful here too - but it's no Hawaii! About me: I'm not yet 30, got married in October 2008, bought our first house in March 2009, and am pregnant with our first baby (a little girl!) due January 2010. The kitchen in our new home leaves something to be desired... having a very small wall oven that doesn't fit the baking sheets I have become accustomed to! But, it works. Someday we'll have the money to remodel :) I've been to culinary school (stopping just before I got my certificate because I got accepted into a 4-year college and wanted to get a bachelors degree.) So, I've made lots of things, from Sweetbreads and Lobster, to Souffles and Chocolate Mousse. Although I was also trained in cooking "real" food, my love is for baking, pastries, and desserts. My major problem is that I feel the need to follow a recipe all the time. Unless it's something that I've made forever, and feel comfortable with - I much prefer having the recipe in front of me. (I've played many instruments as well - and I was the same way about needing music in front of me, and being unable to improvise.) I came to recipezaar to find easy recipes that I can make my own. Being the primary cook in the house, I enjoy cooking each day, but hate doing the meal planning portion. I want to find some dishes that I can turn into regulars in my home, so I'm here mostly to look for inspiration. (Although I also look around for special occasion food ideas too!)
