Pumpkin Cookies With Caramel Frosting

"I got this from my sister who has had this recipe for centuries and never tried it. I have no idea where it came from. I tried it and it was yummy."

  • Cream together 1 cup of butter, sugar, 1 teaspoon vanilla, pumpkin, eggs, and salt.
  • Sift flour, cinnamon, baking soda, and baking powder. Add to creamed mixture.
  • Bake at 300 degrees for 15 to 20 minutes on an ungreased cookie sheet.
  • For frosting, combine remaining butter, milk, and brown sugar in a saucepan.
  • Boil 2 minutes, stirring constantly, then let cool.
  • Stir in powdered sugar and remaining vanilla. Beat until smooth and creamy.
  • Frost cookies with the frosting.

  1. These were very enjoyable and my family liked these pumpkin treats. The frosting was a bit of a challenge as a couple of minutes boil may not be enough time for sugars to reach the desired consistency. I made 2 batches of frosting as the 1st was too runny, therefore I had to cook it to thicken it up which resulted in more of a caramel type frosting. The second batch, I added a little less milk and cooked it longer which worked to what the frosting was meant to be (picture shows both). At least next time I'll know what to do, will also add a bit less baking soda (compensating with more baking powder) to diminish the soda taste a tad. Overall a nice way to enjoy a pumpkin treat.
