Pumpkin Cookies

Ingredients:

Yield: 42 cookies

• 1 cup shortening
• 1/2 cup granulated sugar
• 1/2 cup packed brown sugar
• 1 1/2 teaspoons pumpkin pie spice
• 1/2 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1 egg
• 1 cup canned pumpkin
• 2 cups all-purpose flour

Directions:

1. In a medium mixing bowl, beat shortening with an electric mixer on medium to high speed for 30 seconds.
2. Add the granulated sugar, brown sugar, pumpkin pie spice, baking powder, and baking soda.
3. Beat until combined, scraping sides of bowl.
4. Beat in the egg and pumpkin.
5. Beat in as much of the flour as you can with the mixer.
6. Stir in remaining flour.
7. Drop dough by a rounded teaspoon 2 inches apart onto an ungreased cookie sheet.
8. Bake cookies in a 375 degree F oven for 8 to 10 minutes or until tops seem firm.
9. Transfer cookies to a wire rack; cool.

I made these cookies for my daughters Kindergarten Thanksgiving Feast. I put a small dolop of whipped cream on each one and the kids loved them. Four moms called me today asking for the recipe. We will be making these again.

This was a very easy recipe to make. It is not very sweet even though it calls for a cup of sugar total. It tastes a lot like pumkin bread. This is a good recipe if you are looking for something that isn't too sweet.
