Pumpkin Cookies

"Yummy cake-like cookies that are amazing in the fall or anytime of year:) I got this recipe from my childhood babysitter. They are my family's favorite!"

• Yields: 24 cookies

ingredients

• For Cookies

• 1 cup shortening
• 2 cups sugar
• 2 cups canned pumpkin puree
• 2 eggs
• 4 cups flour
• 2 teaspoons cinnamon
• 1 teaspoon salt
• 2 teaspoons baking soda

• Frosting

• 1⁄2 cup butter
• 1 (8 ounce) package cream cheese
• 1 teaspoon vanilla
• 5 -6 cups powdered sugar

directions

1. Cream sugar and shortening until fluffy, Add pumpkin. Add eggs one at a time. Mix until well combined.
2. Meanwhile, mix dry ingreadients together.
3. Add dry ingreadients to the wet in 3 incroments.
4. Drop cookie dough onto a parchment lined baking sheet and bake at 375 degrees for 12 minutes.
5. For the frosting:.
6. Cream butter and cream cheese together.
7. Once creamy add vanilla and powdered sugar until it reaches the right consistancy for spreading.
