Cook 15 mins
- Cream butter and honey.
- Beat in egg, vanilla, and pumpkin.
- Stir in remaining ingredients.
- Drop by tablespoons onto a greased cookie sheet.
- Bake at 350* for 15 minutes.
These were allright I guess, but the pumpkin tasted really squashy...not pumpkin-pie like at all. I don't think the honey gives them enough sweetness.
melanie . . . i bet if you added some allspice or even pumpkin pie spice to that nutmeg and cinnamon it would reach that pumpkin pie flavor you're looking for. just boosting the cinnamon and nutmeg would help a little too.
