This is a little different than the other pumpkin chocolate chip cookie recipes already posted. I haven't made this yet so I'm not sure how many it makes.
- 1 cup butter, softened
- 3⁄4 cup brown sugar, packed
- 3⁄4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 cup quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup canned pumpkin (not pumpkin pie)
- 1 1⁄2 cups chocolate chips
- Cream butter and sugars.
- Beat in egg and vanilla.
- Combine flour, oats, baking soda, cinnamon, and nutmeg.
- Stir into creamed mixture alternately with pumpkin.
- Fold in chocolate chips.
- Drop by Tbsp onto greased cookie sheets.
- Bake at 350 degrees for 12-13 minutes or until lightly browned.
Made these to take to work. They were a huge hit - even with me!! That's saying something, as usually if it's not chocolate, I'm not interested. These were seriously AWESOME!! The changes I made were to omit the butter and use applesauce instead (VERY nice and moist cookie!!), added nutmeg, and instead of chocolate chips, I added half butterscotch chips and half white chocolate chips. Making them again right now as my DH and DS have not stopped grousing about how they only got a couple! Great fall recipe!
Fantastic! I just made these tonight. Super simple recipe, they came out of the oven after 13 minutes, perfectly baked, moist and delicious. I will be making these every fall from now on.
These are the best pumpkin cookies i've come across. My family and neighbors really liked them too! Easy to make and come out great!
