Pumpkin Chocolate Brownies

I haven't tried these yet. I wanted to post the recipe here for safe keeping. They sound delicious. I'm sure they'd be a great addition to any holiday dessert table. I found this recipe at Meals.com. cooking time is baking time combined with cooling time.

  1. Preheat oven to 350°F Coat 9-inch-square baking pan with nonstick cooking spray.
  2. Combine sugar, pumpkin, egg, egg whites and oil in large mixeing bowl.
  3. Beat with an electric mixer on medium speed until blended.
  4. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg.
  5. Beat on low speed until batter is smooth.
  6. Stir in mini-chips.
  7. Spread evenly into prepared pan.
  8. Bake for 15 to 20 minutes or until wooden pick inserted near center comes out clean.
  9. Cool in pan for about 20 minutes on wire rack.
  10. Cut into 2-inch squares.

I thought these were pretty good. I thought they were similar to a pumpkin bar, but not quite as good as some I've tried. I ended up making and icing with a good cream cheese frosting recipe I have. After I added that, then I thought they were quite delicious.

These are wonderful, have made them twice now by family demand ! I also made them a third time but with a twist for you coffee lovers. I took a tbl spoon of "Pumpkin Spice" coffee and mixed it with a tbl spoon of very hot water.Then added it to the mixture in step 2 of the directions. I made gift baskets for friends & family for Valentines day with coffee and brownies. Everyone Love them thanks for a great recipe to work with!
