- 2 eggs

- 157.80 ml oil or 157.80 ml applesauce
- 425.24 g can pumpkin
- 4.92 ml vanilla
- 236.59 ml buttermilk or 236.59 ml plain yogurt
- 236.59 ml raisins
- 236.59 ml walnuts (optional)
- 473.18 ml carrots (or more)
- 591.47 ml whole wheat flour
- 29.58 ml wheat germ
- 0.25 ml salt
- 14.79 ml cinnamon
- 4.92 ml pumpkin pie spice
- 4.92 4.92 ml allspice or 4.92 ml nutmeg, etc
directions
- Beat eggs, and mix in sugar, oil, pumpkin, vanilla, buttermilk, raisins, carrots, and nuts.
- Gradually add spices, flour, and wheat germ. Stir well.
- Bake in well-greased muffin tins or 2 bread pans at 350 until they smell good.
