Pumpkin Bread With Cranberries

I havent made this yet but am posting it here for safe keeping. Sounded interesting and very "fallish" like a great recipe for Thanksgiving time.

Laurie I made a mistake and baked the bread at 375 degree oven instead of 350. My bread did get a bit darker around the edges and the middle did not bake thru. I will definitely be making the bread again at a later date. The bread has a wonderful flavor, almost a spice cake or fruit cake type flavor. It is a heavier textured bread but also moist and delicious. This would be a wonderful dessert with a bit of flavored whipped cream or on a cold brisk morning with a hot cup of coffee.   1. Preheat oven to 350.
  2. Lightly butter two 9"x5" loaf pans.
  3. In a large mixing bowl, combine flour, soda, salt, cinnamon, nutmeg and sugar.
  4. Add eggs, water, oil, lemon zest, orange juice and pumpkin.
  5. Stir until blended.
  6. Add cranberries.
  7. Mix well.
  8. Pour into loaf pans.
  9. Bake 1 hour.
  10. Cool for about 10 minutes.
  11. Remove from pans and let cool on a rack.
