When lived in Pittsburgh, my girl's nursery school made this and sent home samples and the recipe. It is so easy and good. Kids love to help make it.

I changed a couple of things - I used 1 tsp of pumpkin pie spice instead of the cinnamon and nutmeg. I also used a 8x8 cake pan, and I used the dry mixture to coat the greased pan. The cooking time was the same, and it's delicious! Thanks for the great recipe!

  1. Sift together all the dry ingredients into a bowl.
  2. Mix together all the wet ingredients (oil, water, eggs, vanilla, and pumpkin).
  3. Stir wet ingredients into the flour.
  4. Bake in greased loaf pan for 1 hour at 350.
