Pumpkin Bread

"I got this recipe from my friend Annmarie. It's excellent for holiday gift-giving! You can also make it into muffins instead of loaves. The muffins will take about 35-40 minutes to bake."

  • Preheat oven to 350 degrees. Grease and flour (7" x 3") loaf pans.
  • In large bowl, mix together pumpkin, eggs, applesauce, oil, sugar until well blended.
  • In separate bowl, mix together flour, baking soda, salt, and spices.
  • Stir dry ingredients into the pumpkin mixture until just blended.
  • Fold in mini chocolate chips and vanilla extract.
  • Pour into greased loaf pans (or muffin tins, if you prefer).
  • Bake for about an hour or until a toothpick tests clean.
