This is an old Weight Watchers recipe.
- 1⁄2 cup canned pumpkin (reg. pumpkin, not pumpkin pie mix)
- 1 egg
- 1⁄3 cup non-fat powdered milk
- 3 tablespoons flour
- 1 teaspoon pumpkin pie spice
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon vanilla extract
- 2 tablespoons water
- 2 teaspoons sugar substitute
- Preheat oven to 350 degrees.
- Spray a small loaf pan with butter flavored spray.
- Mix all ingredients well and pour into loaf pan.
- Bake for 20-30 minutes.
I would not call this a bread exactly. the egg taste is very strong--it's like a cross between a pumpkin souffle and pumpkin flavored french toast. hmmmmm. might be worth a try if you're up for something a little wacky. i used cinnamon, nutmeg, and allspice in place of the pumpkin pie spice and made 6 muffins. might try doubling the batch subbing another 3 T. flour for one of the eggs.
I'm so sorry to say that these were bad. Really bad. Although, to give you the benifit of the doubt, I might have done something wrong, but I don't think I did.... sorry
I was playing Zaar tag and was making a pumpkin oup, and with so much pumpkin in the house this was the perfect cap to a pumpkin themed lunch. I didn't have any canned pumpkin so I used a medium sized chunk of fresh pumpkin, cooked in the microwave and then pureed in the food processor. I just added the rest of the ingredients to the food processor and buzzed away. I also didn't have any pumpkin pie spice, so I used a combination of nutmeg, cinnamon and a minute pinch of mace. Yummy! I can't wait to have the leftovers tomorrow morning, toasted and slathered in sweet butter. Shari2, this recipe rocks!
