directions

  • Preheat over to 350.
  • Stir dry ingredients together.
  • Mix pumpkin, water, oil, and eggs together.
  • Combine dry ingredients and pumpkin mixture together.
  • Pour into 2 medium and 4 small greased loaf pans or 7 small greased loaf pans or 2 large greased loaf pans - 9x5x3.
  • Bake large loaf pans for 1 hour 15 minutes.
  • Bake medium & small loaf pans for 45 minutes.
  • Bake small loaf pans for 45 minutes.

  1. This recipe is awesome!!! Just the perfect amount of cinnamon, nutmeg, and pumpkin. I did put some chopped up walnuts in mine to add a little crunch. I've made muffins and bread loaves, and they all have turned out perfect. Thanks for a great recipe!
     
  2. This is the exact recipe my mom gave me with the exception of the cinnamon. Her recipe calls for 1 tsp rather than 2. I'm going to try it with more next time I make it though. This is always a hit!!
     
  3. Oh, my, Sharon. This was inspired! I really thought that only 2 cups of pumpkin would not be enough flavor to make this much bread, put the batter was perfect and yielded 3 med loaves and 1 med large loaf. The bread is moist and flavorful. I'm planning on having some slightly toasted with cream cheese, tomorrow morning. Thnx for sharing this, Sharon. Made for PAC Fall 2009.
     
  4. Delicious is not enough of an adjective for this bread. The addition of nutmeg and cinnamon to the batter - well let's just say it is heavenly! Very nice moist consistency of the bread. I ended up with 4 small loaves and one large loaf and they all baked perfectly! Next time I may add some chopped dried cranberries just for some extra zing and for fun! Thanks Sharon ~ my adopted PAC chef of April 2008.

I'm a RETIRED high school administrator. I love to cook and my husband is a patient taste tester for me (poor baby)! Very lucky he is not a picky eater! We have an awesome son and daughter-in-law but unfortunately they live in Los Angeles so not much physical visiting. Lots of phone calls though! ? I love collecting cookbooks (drives my husband crazy), logo golf balls, and salt & pepper shakers (thanks to getting started with the old recipezaar swaps!). Recipezaar/Food.com has been a fantastic site for me. I have learned a ton at this site and really enjoy all of the forums (I think I'm getting addicted to the Swaps!!) My next big challenge is to learn how to put photographs on of the dishes I am making. Suggestions are definitely invited!!
