  • Mix first four ingredients well. Sift last four ingridients together; add to first mixture. Pour into a greased jellyroll pan. Bake on a 325 oven for 25 minutes. Cool cake completely.
  • In a large mixing bowl place cream cheese, butter, vanilla, and milk beat unitl light and fluffy, add powdered sugar and beat. May need to add more powdered sugar or milk for frosting.
  • Frost bars.

  1. As written, these pumpkin bars are quite sweet, but otherwise bland. I cut the sugar down a lot, and used some splenda. I also added more cinnamon, nutmeg, a little ginger, and a couple dashes of allspice to jazz this up a bit. I found the amount of frosting to be quite excessive, as did several of my coworkers, even though I didn't use it all. I think 4 oz of cream cheese and 1/4-1/2 cup of butter would be plenty, along with enough powdered sugar to make it fluffy. With the vanilla, the extra liquid (milk) probably wouldn't be needed. I topped with coarsely chopped walnuts. Thanks for posting. Made for fall PAC.
