Cake is great tasting. Had to bake in a 13x9 pan as my tube one was out on loan. In that size pan though it could of used more glaze, but otherwise a great tasting cake!
I think this had a little too much spice added in... and I preferred it without the glaze as it added even more spice to the cake.
This was just light light very heavy!Maybe if you whip the egg whites then fold into the batter.
What a delicious combination of bananas and pumpkin! I omitted the ginger, pine nuts and glaze. Walnuts or chocolate chips make great alternatives. Moist and light. This recipe is a keeper!
Used egg substitute, 3 bananas, only 1/4 tsp. ginger, added a pinch of ground cloves, no nuts and no glaze. This was terrific, not too spicy, very moist and fluffy and a perfect balance of banana and pumpkin. I will be making it many times throughout the holiday season for my guests. Thanks!!
