I made this recipe this morning and am really happy with the results! Instead of making two loaves of bread, I made 24 muffins. They came out very moist and were done in about 22- 25 minutes.
I was a little surprised at the calorie count for this recipe, which is nearly 560 calories per serving! However, that's assuming that there are 8 servings in the recipe. By making muffins instead of loaves, I can manage the portioning better and reduce the calorie intake. Yummy!!
I haven't baked this (yet) but I was a happy eater of Lisa Clarice's vegan efforts. Super moist and tasty! Dense, yet soft with little nuggets of raisin-y goodness. Nice crumb topping too!
