These muffins were wonderful and are so much healthier than most snacks we eat at our house! My son loved helping me make them. I doubled this recipe and used the topping from Strawberry Rhubarb Streusel Pie # 83789 on half of the muffins. It would be enough topping for all of them though. Next time I would mix up the streusel first and put it in the fridge until it's time to put it on top. I would also cut the apples before you start putting things in your mixer. If you're like me and go down the list of ingredients, that holds up the processes in the end. Once you add the baking powder it reacts pretty quick, so I would probably add that last next time.
For everything this recipe IS, it earns 5-stars! It IS low-fat and it IS a lower-calorie muffin! It IS a way to increase fiber intake and get a little more protein, too, all while enjoying that "carb fix" that is so necessary for me!! For being so healthy, these were very moist and had a nice flavor. I couldn't tell there was pumpkin in them, but I enjoyed the little chunks of apple. I didn't top them with anything, but I imagine they become quite tasty if you do. These are muffins I wouldn't get hungry for regularly, but if you're on a diet (like me) they're nice little muffins to curb your appetite and keep your taste buds happy.
Very nice low-fat and healthy muffin. Great combination of flavors and love the amount of nutmeg in these. I can never get enough nutmeg flavor :) Moist, too! Made for Spring 2011 PAC game.
I spread my gram's Homeade apple Butter on top and served this for Sunday brunch.. Yum! My sister liked it with strawberry cream cheese
